Oven Potato Rounds and Special Sauce

My husband is a meat and potato man... That being said, I have made potatoes so many different ways since we've been married, but this is our favorite! These rounds are simple, delicious, and an easy week-night side. Can't go wrong with a good potato recipe. Enjoy!

POTATO ROUND INGREDIENTS:

4 Large Russet Potatoes

1/3 Cup Extra Virgin Olive Oil

2 Teaspoons Garlic Salt

2 Teaspoons Paprika

2 Teaspoons Black Pepper

 

POTATO ROUND DIRECTIONS:

Preheat the oven to 425 degrees and line two baking sheets with parchment paper or silpat.

Slice the potatoes into rounds that are about ¼ -inch thick and place in a mixing bowl. In a separate bowl mix together, dry ingredients. Next, combine olive oil with potatoes and toss the rounds with oil until thoroughly coated.

Space potato rounds apart on the baking sheets. Sprinkle the tops with the dry mixture, then flip them over and sprinkle the other sides.

Bake for 35 to 45 minutes, or until golden brown. Remove from oven and serve with special sauce recipe below.

 

 

SPECIAL SAUCE INGREDIENTS:

1/2 cup Mayonnaise

1/4 cup Ketchup

1/2 teaspoon Garlic Salt

1/4 teaspoon Worcestershire Sauce

 1 teaspoon Black Pepper

SPECIAL SAUCE DIRECTIONS:

Mix together the mayonnaise, ketchup, black pepper, and garlic salt. Once combined slowly stir in Worcestershire sauce and blend well.

Add more black pepper (to taste) and mix well.

Refrigerate for 20 minutes before serving.
