My sweet friend Meg has been sending me this recipe for years. Every time I make it somehow I lose the ingredient list. So, for Meg's sake, mine, and yours I thought I'd share!
This is a four ingredient Chocolate Mousse that won't ruin your diet and tastes delicious. Enjoy!
Prep Time: 5 min Fridge Time: 12 - 24 hours Serves: 4
1/4 cup cocoa powder 1 can unshaken coconut milk
1-2 tablespoons sugar, sweetener or agave
2 cups whipping cream
1 teaspoon vanilla
***Not neccessary but I enjoy adding chocolate chips and raspberries to mine!
Leave coconut milk unopened in fridge for 12-24 hours.
Pour out the coconut water that separated from the milk.
In large bowl, stir then whip coconut milk, sweetener, and cocoa powder Add 1/2 whipped cream to coconut mixture and stir till well mixed.
Spoon into bowls with a spoon full of whipped cream on top, store in fridge uncovered until you are ready to serve.
